Preparation Boil the cauliflower pieces for 3 to 4 minutes. Before preparing the artichokes, prepare a bowl of water with lemon juice to stop the artichokes from going black.

Prepare the artichokes by cutting off the stalks and the points. Remove the harder leaves from the outside. Cut the artichokes into slices about ˝ centimetre thick and put them into the lemon water.

Peel the potatoes and cut them into round pieces ˝ cm. thick. Put the ricotta into the freezer for five minutes before cutting them into 1 centimetre thick slices. Peel the apples and cut them into slices just like the vegetables.

Prepare the batter (see the recipe under Batter)

Put a large deep pan on the fire and add the oil for frying. In the meantime put the vegetables etc. into the batter, then fry them. Let them brown and put them onto absorbent kitchen paper to drain. Serve piping hot.
 
The Chef's tips To check that the temperature is right, put a wooden toothpick in the oil and if bubbles form around it, you can start frying. You can drink a white wine such as Langhe Favorita with your fritters.
