Preparation Remove the hard parts of the vegetables and wash well. Scald them in a little hot water for 5 to 10 minutes. Let the garlic brown slightly in the oil in a pan. Skin and dice the sausage and add to the pan. Let it braise for 5 minutes stirring with a wooden spoon. Add the vegetables and toss for 10 minutes over a low heat, stirring well. Dice the Provola cheese.

Preheat the oven to 200°. Line a rectangular oven dish, to be taken to table, with oven paper. Sprinkle a little flour onto a pastry board. Roll the dough out to a 1cm. thickness. Cut out squares of 10cm. Put the vegetable and sausage mixture on top. Then add the diced Provola cheese. Stick the two opposite corners of the square together to form a diagonal (the cannolo) Repeat until all the dough and fillings are used up. Arrange the cannoli on the oven dish, one next to the other. Bake for 15 minutes and serve at table in the same dish.

The Chef's tips Falanghina- a dry white wine to be served at 8 to 10°C.

Curiosity When you hear the term cannoli, you immediately think of the Sicilian pastries filled with a ricotta mixture, but these only take their name because of their similar shape being the only thing in common.
