Preparation Boil the potatoes and let them rest for a while to cool and dry out. If you don’t have enough time to wait, just add some flour when you mash them.
Mash the potatoes and add the 3 egg yolks, salt and pepper. Mix well.
Make little balls with the mixed ingredients. Roll the balls in the remaining egg whites and then in the bread-crumbs.
Fry in hot oil until they brown. The Chef's tips The trick to avoid the croquettes from breaking open while they fry is to boil the potatoes the day before so that they dry are not so wet. The following day they are ready to be mashed. We recommend a white wine such as Anna dei Fiori with your croquettes.
