Ingredients Button mushrooms  400gr.
Eggs  2
Grated Pecorino cheese  2 spoonfuls
Garlic  2 cloves
Parsley  1 small twig
Seed oil  as required
Salt  to taste
Pepper  to taste

Preparation Wash the mushrooms thoroughly. Put some oil into a pan and put it on a medium heat fire. Add the mushrooms. Let cook for about 15 minutes. Turn off the fire and add some salt.

Drain the mushrooms well with a skimmer and mince them with the garlic and the parsley. Add the grated Pecorino cheese, the eggs and some pepper. Mix well, until the mixture has thickened.

Make some balls, about the size of a walnut.

Heat some oil in a pan and fry the croquettes. They must be browned all over. Let them drain on absorbent kitchen paper. Serve hot.
 
The Chef's tips You can also use olive oil to fry the croquettes. It is lighter than seed oil. Drink La Segreta di Pianeta with these croquettes.
