Preparation Herrings: Cut the herrings into single fillets and put them onto a board with the skin side down. Sprinkle them with a little salt and some freshly ground pepper. Slice the onion finely and blanch the slices in boiling water. Put a few slices onto the herring fillets and seal them with a tooth pick. Put them into a heat resistant container.
Marinade: Add all the ingredients for the marinade to the container. Put it over a moderate to high heat until it boils and then let it simmer a while on a lower heat. Take the container off and let it cool. You can then put the roll mops into sterilized jars and check that the herrings are covered with the marinade. Seal the jars well and they can now be kept in the refrigerator. Wait a week before eating The Chef's tips We recommend Chianti with your dish.
