Anchovies  2
Extra virgin olive oil  as required
Hard boiled eggs  1
Parsley  to taste

Preparation Stone the olives carefully. Wash the anchovies and remove their bones. Dice them as well as the gherkins and the parsley and mix them all together with the yolk of a hard boiled egg.

Stuff each olive with the mixture carefully and arrange them on a serving dish. Sprinkle them with a little olive oil.
