Preparation Prepare the celery by cutting off the end and leaves and remove their hard parts of the stalk. Then wash the celery well and cut it into medium sized slices.
Shell the walnuts being careful not to break the kernels which you will then cut in half. Put them into a salad bowl together with the celery slices and add the Groviera cheese cut into cubes. Mix the salad well.
Break the Gorgonzola cheese into pieces using a knife and put them into a bowl. Amalgamate the milk and cheese together using a fork working on the mixture until you have a smooth, soft sauce.
Pour the sauce onto the salad and season with a pinch of salt and a little ground pepper. Season well with extra virgin olive oil and mix your salad well. Serve with slices of white loaf toasted in the oven. The Chef's tips Drink a red wine like Trebbiano d'Abruzzo rosso with your dish.
