Ingredients Green olives  300 gr.
Minced beef  150 gr.
Mortadella  50 gr.
Bread crumbs  as required
Chives  as required
Eggs  2
Garlic  1 clove
Extra virgin olive oil  as required
Salt  to taste
Pepper  to taste

Preparation Stone the olives and put them aside. Brown the garlic in a pan with a little oil, add the meat and cook for 5 minutes. Mince the mortadella, add it to the mixture and season with salt and pepper. Cut the chives into small pieces and add. Lastly, stir in a few bread crumbs to thicken the mixture.

Stuff the olives with the mixture you have prepared taking care not to bread them. Beat the eggs and add a pinch of salt and a little pepper. Pass the stuffed olives carefully in the egg then in the bread crumbs pressing them well. Fry the olives in very hot oil until they are golden brown.
 
The Chef's tips If you want your olives to be crisper, dip them in the egg and bread crumbs twice.
