Ingredients Fresh dough in sheets  1 kilo
Artichokes  10
Mint  as required
Mozzarella cheese  1
Chili  as required
Extra-virgin olive oil 
Salt  to taste
Grated Parmesan cheese  50 gr.
Béchamel sauce  1 litre

Preparation Remove the outer tougher leaves from the artichokes, then cut them into little pieces and cook them in hot oil adding the chilli, mint and salt, for about 20 minutes. When they are ready, pass them quickly in a mixer but not too much as they should only be slightly chopped.

In the meantime, prepare the béchamel sauce and when it is ready add the artichokes, mixing them all together.

The fresh pastry sheets can be prepared at home or bought from the super market. Cut it into rectangles the size of the oven dish and start making the layers. Lay a few spoonfuls of artichokes and the béchamel sauce on each layer as well as some mozzarella cheese cut into cubes and grated Parmesan cheese. When the oven is hot, cook the pasta at 180° for 45 minutes.
 
The Chef's tips To chop up the artichokes, use a mixer; you will be able to regulate the size of the vegetables according to your taste. We recommend you should drink Frascati with your dish.
 
Curiosity You can exchange the vegetables for the filling with any other of the season and the result will always be exceptional.
