Ingredients Flour  350 gr.
Extra virgin olive oil  as required
Bread crumbs  100 gr.
Eggs  6
Parmesan cheese, 150 gr. Sausage  150 gr.
Raw ham  200 gr.
Nutmeg  to taste
Salt  to taste
Pepper  to taste

Preparation Cut the meats into small cubes of about ¾ cm. Heat the oil in a pan and toss the meat, ham and sausage in pieces. Add the salt and pepper and cook for a further 10 minutes. Take the pan off the fire and let the excess fat drain off the meat. Mince the meat and put it into a bowl. Add and mix in the Parmesan cheese, bread crumbs, eggs and a little grated nutmeg. Mix well until you have a soft smooth mixture.

Prepare the egg dough rolling it out until you have a very thin sheet (less than 1 mm.). Then cut pieces of about 3 cm. square. Place a nut of the mixture in the middle and fold the square to form a triangle which you will then fold around your index finger and press the ends together firmly. Boil in the broth.
 
The Chef's tips The broth you use for your tortellini may be chicken or meat broth or made with a soup cube, as you like. We recommend you should drink a young red wine like Lambrusco.
