Ingredients Bellavista rice  250 gr.
Green olives  10
Black olives  10
Mozzarella cheese  1
Ham  150 gr.
Peas  50 gr.
Carrots  1
Potatoes  1
Chives  1 bunch
Tuna fish  150 gr.
Hard boiled eggs  2
Artichokes in oil  8
Salt  to taste
Extra virgin olive oil  as required

Preparation Put a large casserole on the fire and add salt. Cut the carrot into rings and put them into the pot. Cook for 10 minutes. Cut the potato into cubes and add together with the peas and the rice. Cook for 16 minutes.

When the rice is ready, strain and cool it under running water. Then add the olives and the Mozzarella cheese and the ham cut into cubes together with the, tuna fish, eggs and artichokes cut into slices. Sprinkle with the finely diced chives and season with oil and lemon.

Mix well and serve in an attractive salad dish.

Curiosity Bellavista rice is a combination of wild rice and plain white rice. Wild rice is to be found in the northern regions of the United States of America where it grows wild although attempts have been made to cultivate it.
