Ingredients Spelt  a cup
Red beans  400 gr.
Tomatoes  2
Celery  1
Garlic  a clove
Onions  1
Sage  a sprig
Marjoram  a pinch
Extra virgin olive oil  as required
Salt  to taste
Black pepper  to taste.

Preparation Preparation When the water boils in the pot add the beans and let them boil. Dice the onion and let it brown together with the ripe tomatoes, celery, garlic, sage and marjoram. Put the extra virgin olive oil and the above flavorings and tomatoes into a terra cotta pot and brown them altogether.

Pass them through a masher together with the water where you have boiled the beans. Add the spelt and cook for about 40 minutes together with the salt. Before serving, add a little black pepper and a drop of extra virgin olive oil.
