Ingredients Rice  80gr.
Garlic  2 cloves
Tomatoes  4 ripes ones
Extra virgin olive oil  Potatoes
Zucchini  2
Peppers  1
Basil  a sprig
Carrots  1
Cooked ham  150 gr.
Meat broth  1 and a haf litres
Peas  100 gr.shelled
Onions  1
Salt  to taste
Pepper  to taste

Preparation Scald the tomatoes and remove the skins and pips. Then cut them into small pieces. Wash, dry and dice the basil.

Peel and dice the garlic cloves and the onion and braize on a low heat in extra virigin olive oil. Add the tomatoes, salt and pepper and sprinkle with basil. Let the sauce cook for 20 minutes on a low heat.

In the meantime, clean, peel and wash the vegetables and cut them into cubes. Add the sauce to the broth and stir. Then add the ham cut into cubes and the peas.

Cook for a further 20 minutes adding the vegetables and the rice. Pour the soup into a pre-heated soup tureen and serve hot as table.
 
The Chef's tips To cook the soup well and keep it hot, use an earthenware pot.
