Ingredients Swiss chard leaves  800 gr.
Extra virgin olive oil  6 tablespoons
Garlic  2 cloves
Onions  1
Peeled tomatoes  300 gr.
Eggs  4
Italian bread  4 large slices
Salt  to taste
Pecorino cheese  as an option

Preparation Dice the onion and garlic and brown in a pot in the extra virgin olive oil, then add the tomatoes. Wash the Swiss chard leaves and add them to the pot with enough water to cover. Season with salt and let it all boil with the lid on.

In the meantime, toast the bread and put them into the soup plates. Poach the eggs, one at the time, in salty water and when you can see the whites, drain and put an egg on each slice of bread.

Arrange the Swiss chard on the eggs and add the broth and serve hot sprinkled with the grated Pecorino cheese.
 
The Chef's tips When you buy your Swiss chard, try to find the ones that have red streaks on the leaves as they are tastier.
