Bones  500 gr.
Sage  1 spoonful
Rosemary  1 spoonful
Onions  1
Red Wine  2 glasses
Flour  200 gr.
Water  10 litres

Preparation

Place the marrow, bones, grated onion, spices, wine and the flour into a large pot and cover them all with water, about 10 litres. Bring it all to a boil, and simmer for 24 hours.

The result should be a not very liquid sauce that you will be able to keep in a fresh and dry place for many months.
