Preparation Sauté the onion in the oil until they are golden brown. Add the peeled tomatoes, either fresh or tinned. (For those who prefer a smooth sauce, the skin and pips can be removed beforehand through a strainer or blender.) Add the basil cut into strips and cook for about twenty minutes until the sauce thickens slightly.

When your pasta has been cooked according to the instructions on the packet, drain well and add the sauce. To amalgamate the recipe well, you may toss the pasta in the sauce for a couple of minutes. Serve hot with a sprinkling of Parmesan cheese.

The Chef's tips We recommend you drink a white wine such as Cerveteri Bianco with your dish.

Curiosity This sauce can be used to season any type of pasta, long or short, as well as vegetables, fish, eggs or meat.
