Preparation Clean the artichokes by removing the harder outer leaves and cut off the point and the stem. Divide them into two then slice them ½ centimetre thick. Prepare water and lemon to emerge the artichokes so that they don’t become black.
Now put a pan on the fire, add the oil and let it get hot. Then pass the artichoke slices in the batter and fry them, a little at a time, for 2 or 3 minutes on both sides until they are golden brown. Drain them on absorbent kitchen paper. Add salt as required and serve hot. The Chef's tips Use a high pan for frying and plenty of oil and the fry will be easier to digest. We suggest you select a white wine such as Frascati for your artichokes. Curiosity The leaves of the artichoke plant are used in herb stores for diuresis and have purifying properties. They also help reducing the cholesterol level in the blood.
