Preparation Clean and boil the asparagus and drain them. Put them on a clean cloth to dry. Wash the shrimps and shell them. Cook them in boiling water for 5 minutes. Drain and let them cool. Cut the celery hearts into very fine strips (Julienne) and slice the gherkins. Wash the lettuce.
