Ingredients Potatoes  3 medium
Oranges  the grated peel
Low fat butter  a knob
Freshly ground pepper  to taste
Grated Parmesan cheese  a tablespoonful
Oranges  the juice of one orange

Preparation Add all the ingredients to the mousse: the knob of butter, the grated orange peel, the Parmesan cheese, freshly ground black pepper and the salt.

Add the orange juice to the potato mousse and mix well and put it on the fire at a low heat until it is smooth. Put the mousse into a confectioner's bag or one made of material. This dish goes very well for accompanying pork dishes.

Squeeze the mousse around the meat. You can decorate the potatoes with spring onions.
