Ingredients Pumpkin  500 gr.
Red lettuce  1
Extra virgin olive oil  as required
Rosemary  a twig
Salt  to taste
Pepper  to taste
Nutmeg  to taste
Milk  200 ml
Cream  100 ml
Eggs  2
Egg yolks  1
Grated cheese  a heaped tablespoon
Maize flour  2 tablespoons

Preparation Wash the pumpkin and cut it into small pieces then wash and cut the red lettuce leaves roughly. Braise the vegetables in a pan in extra virgin olive oil then place them in an oven dish. Add some salt and pepper according to your taste. Then add a little rosemary and nutmeg.

Whisk the milk, cream, the two eggs and the egg yolk and the heaped grated cheese. Add 2 tablespoons of maize flour diluted in a little milk. Sprinkle with salt and pepper and mix well until you have a smooth mixture. Pour it into the oven dish at 175°C for about 25 minutes until your clafoutis is golden brown.
