Ingredients Ricotta cheese  500 gr.
Caprino cheese  250 gr.
Parmesan cheese  50 gr.
Black olives  100 gr.
Chilli  2
Extra virgin olive oil  4 tablespoons
Salt  to taste
Pepper  to taste
Chives  a few leaves

Preparation Put the Ricotta cheese into a bowl together with the Caprino cheese and mix them well, then add the grated Parmesan cheese. Dice the black olives roughly together with the chilli and add. Mix everything together well and add the extra virgin olive oil and sprinkle the salt and pepper. Dice the chives roughly together with the basil and add to the mixture and mix well.

Lay out a piece of transparent paper on a flat serving dish and grease with oil. Lay the mixture on the paper and form a roll. Leave the roll inside the paper and put it into the refrigerator for at least an hour. In the meantime, prepare a sauce with the rocket as described in the recipe Pesto with rocket and if you don’t like almonds you can replace them with walnuts.

Lastly, cut the roll into slices and arrange them on a plate and serve with the rocket sauce either over the top or on one side.
