Preparation Wash the asparagus well in plenty of water. Scrape the stalks with a small sharp knife. Even out the stalks by removing the harder ends.
Tie them up and put them in a pot containing cold water. Add salt if required and boil for about 10 minutes.
In the meantime, cook the egg yolks in a bowl in bain-marie together with the wine. Add salt and pepper as required. Whip the mixture until you have a smooth dense sauce.
Drain the asparagus and arrange them on a serving dish. Season them with the wine sauce and serve.
