Ingredients Cauliflowers  800 gr.
Extra vergin olive oil  for frying
Flour  240 gr.s
Salted anchovies  2
Salt  to taste
Pepper  to taste

Preparation Remove the outer leaves of the cauliflower, wash it and boil it in plenty of salted water for 20 minutes.

In the meantime, wash the salt out of the anchovies, take out their bones and cut them into small pieces.

Prepare a batter: Put the flour into a bowl and add enough water to make a fairly dense mixture, then add the anchovy pieces.

Break the eggs into a bowl and add a pinch of salt and pepper and beat them well. Drain the cauliflower, dry it and divide the heads. Pass them in the batter, then in the eggs and fry them in plenty of boiling oil.

Serve them hot on a serving dish.
