Preparation Cut the zucchini, egg-plants and the potatoes into slices. Remove the stalk of the button mushroom. Grill both sides of the vegetables for 2 to 3 minutes. Put the eggplant, the button mushroom, the potato and the zucchini slices on an oven dish and sprinkile with a little extra virgin olive oil.
Take a tomino and cut it into half and put the tomino inside it. Carefully lay the cheese on the toasted slice of bread and put the dish in the oven at 180° for 8 minutes to soften but not to melt it.
Place the tomino on the plate delicately and decorate it with the rocket, Pachino tomatoes, parsley and a little extra virgin olive oil. The Chef's tips Serve with a Piedmontese wine, for example: a good Nebbiolo d'Alba Curiosity Tomino is a Piedmontese cheese
