Preparation Start off by putting some chilli in powder form and the grated peel of a lemon into a plate. Cut the Tomino cheeses into medium sized slices and mix them in with the chilli and lemon peel.

Wrap the cheeses in the lemon leaves and put them into the refrigerator for half a day. Just before you serve them, put them into a preheated oven at 160° for five minutes. They are excellent as starters or aperitifs.
