Ingredients Fresh anchovies  800 gr.
Olive oil  1 spoonful
Bread Crumbs  100 gr.
Parsley  2 bunches
Garlic  2 cloves
Oregano  optional
Lemon juice  6 spoonfuls
Salt  to taste
Pepper  to taste

Preparation Clean the anchovies by taking the heads off, then open the sides and take out the entrails and bones. Wash and dry them. Grease a 20 cm. cake dish with the oil, spray with bread crumbs and then add a layer of opened anchovies. Add some of the chopped up parsley and garlic, a pinch of oregano, bread crumbs, salt and pepper. Continue adding on the layers until all the ingredients are finished, ending up with the bread crumbs.

Spray over with the lemon juice and put it into the oven at 220 degrees for about half an hour. Serve the anchovies when they are not too hot.
