Preparation Prepare the potato salad as indicated.

Now prepare the cod. First scale it using a sharp knife. Remove the gills using absorbent kitchen paper so that you don’t cut your hands. Open the stomach and take out the insides.

Remove the bitter blood thoroughly near the bones. Wash the fish under the tap. Take a pot for boiling fish and fill it with cold water. If the fish is too large for the pot, cut the head and tail off and place them next to the body.

Add salt and a piece of lemon to the pot. Put the lid on. When the water starts boiling, cook for 10 to 12 minutes and the cod will be ready. Remove the fish from the pot and bone it.

Take off the skin and the bone in the middle. Once the cod is ready, put in the middle of a large oval serving plate and add the extra-virgin olive oil, lemon and a pinch of salt. Arrange the potato salad around the cod and spray a little diced parsley.
