Almond milk  1 small cup
Left over bread  4 slices
Onions  3
Peas  50 gr.
White wine  1 glass
Plum distillate ½  liqueur glass
Cinnamon  as required
Black pepper  to taste
Butter  as required
Saffron  a pinch
Ginger  as required

Preparation Clean the oyster shells thoroughly, brushing them well under running water. Then put them into a pot where you have already placed the almond milk and the puree of peas. Cook until the oysters open up. Then take out the molluscs, pass them in the flour and fry them in the pan with the butter.

Once they are ready, put them into a pot and pass on to the second step in preparing this dish. Soften the hard left over bread pieces in a glass of wine then pass it in the butter.

In the pot where you have placed the oysters, put in the bread and put it on the fire at a low heat. Add the sliced onions and a little cinnamon, ginger, a pinch of saffron and pepper. Now add the rest of the wine and let it cook. Just before it's ready, add the plum distillate.
 
The Chef's tips Add half a glass of water while cooking the oysters and this will enhance the aroma. We recommend you drink the Cinque Terre wine with your oysters.
