Preparation Put the salmon slices, the Ricotta cheese in pieces, the eggs, the Parmesan cheese and the curry into a bowl.
Using an electric beater, whisk the ingredients together until you have obtained a creamy mixture. Add the freshly ground pepper.
Pour the mixture into a plum cake tin, lined with oven paper. Put it into a pre-heated oven at 200°C. for about 25 minutes until it is golden brown.
Before taking it out of the oven, let it cool. Serve with a fresh salad and a white wine such as the Cannellino di Frascati. The Chef's tips Try making the plum cake with the same amount of cooked ham instead of salmon and the same ingredients. It will have the same delicate flavor. In this case, you can accompany it with an excellent Gewurz Traminer. Curiosity If you decide to make this dish with cooked ham, do not use curry.
