Ingredients Anchovy fillets  500 gr.
Extra virgin olive oil  3 tablespoons
Tomatoes  2 ripe ones
Parsley  a bunch
Garlic  2 cloves
Bread crumbs  100 gr.
Salt  to taste

Preparation Open the anchovies in half and remove the fish bones. Wash well and put aside. Prepare the sauce to season the anchovies. Slice the tomatoes finely and chop up the parsley. Peel the garlic. Put the tomatoes, garlic, and parsley into a blender together with the extra virgin oil. Add a little salt and blend well.

Sprinkle a little oil on the bottom of a rectangular oven dish and add a thin layer of bread crumbs. Lay the first layer of anchovies out. Spread half the sauce over this layer. Add another thin layer of bread crumbs. Lay the second layer out and spread the sauce over the top. Add another thin layer of bread crumbs. Sprinkle with a little extra virgin olive oil.

Put the dish in the oven at a medium heat – 160°C. – for thirty minutes and serve hot.
