Preparation Put the chili, tamarind, garlic, oregano, salt and pepper into a blender and whisk until you have a smooth sauce. Add the sugar until you have a well balanced sweet and sour sauce. Place the sauce in a pan and heat over a low fire.
Grease an oven dish slightly and after having washed and dried the fillets of talapia place them in the dish. Put half the sauce over the fillets and leave the rest aside in a warm place. Cover the oven dish with foil and bake at 350° for 15 minutes or longer if your fillets are thick.
When your talapia is ready, uncover the dish and add the remaining warm sauce. Sprinkle it with the spring onions and serve hot at table.
