Preparation Wash the tomatoes and peel them. Remove the seeds and slice the tomatoes. Beat the meat with a meat mallet. Salt and pepper them on both sides.
Put the oil in a saucepan on the fire and add the meat. Raise the heat and braise them on both sides well. Then peel the cloves of garlic and dice them. Add them to the meat together with the tomatoes and the oregano. Add some salt and pepper if required. Cover the saucepan and cook for 3 minutes at low heat until the tomatoes have dried. Add some water if necessary.
Arrange the meat on a serving dish and pour over its sauce. Serve hot. The Chef's tips Ischia Rosso is an 11.5 to 12.5° ruby red wine with a pungent taste to be served at 16/18°C. Curiosity Oregano is a herb used in this region to flavour meat, first courses and pizza because it is very tasty and gives a special flavour to many dishes. It comes from the Greek meaning ‘joy of the mountain’ as it grows wild there. It is sometimes called wild marjoram but it is more tangy than the latter. It can be obtained in a dried form in supermarkets in most countries as it is widely known in different parts of the world.
