Preparation Cut the chicken into pieces and season with salt and pepper. Put some oil into a deep pan and sautè the chicken pieces until they are golen brown.
Slice the onion finely and add to the pan. Cook for a few minutes then add the white wine and let it evaporate.
Chop the tomatoes up into small pieces and add to the pan as well as the two cloves of garlic. Let the chicken cook on a low heat until it is tender. Prepare the peppers by removing the white seeds inside and cut them into pieces. Let them cook in a little olive oil until they are tender. Add the peppers to the chicken and mix together. Simmer a little longer and serve hot. The Chef's tips It is advisable to choose very fresh peppers for this dish otherwise they will spoil your recipe. Curiosity This dish is generally eaten during the summer holidays especially on the holiday 'Ferragosto' on the 15th of August by tradition.
