Preparation Prepare some rectangles of polenta. Then you prepare the Guacamole Sauce with mashed avocado pears, onion, cumin and lemon. A little chilli goes well with this recipe.
Then you prepare the usual hare sauce according the Tuscan recipe. Thus diced carrots, onion, garlic which you sauteč. The hare has to be marinated a little while beforehand with red wine, then sautéed together with this (actually scalded together).
After this, the tomato sauce is added and it is left to cook slowly for quite a while as hares are inclined to be rather tough. Then you put on your plate first the polenta then the hare sauce, then the rest of the polenta with the Guacamole sauce and your dish is now ready.
