Preparation Wash an orange and grate half of the peel. Then squeeze the grapefruit and lemon and filter the juice. Cut the turkey into smallish pieces and pass them in the flour. Slice the onion finely and sauté in the butter in a large pan. Add the pieces of turkey and brown turning them over until they are golden brown.
Season with a little salt and pepper. Add the juice and put the lid on the pan letting the meat cook for 20 minutes stirring every now and then. Then add the cream and a sprinkling of nutmeg. Take the lid off and let the sauce thicken for a few minutes. Put the meat on a serving dish and sprinkle with finely diced parsley and decorate with slices of lemon, orange and grapefruit,
