Preparation Soak the almonds in boiling water then peel them and chop them up finely. Put them on a pastry board together with the sugar, orange rind cut very finely and the flour.

Make a well in the middle and put the softened butter in it and start kneading the dough adding as much milk as required for a medium dough. Put it into a cloth bag with a metal mouthpiece (or the same in paper with the point cut off) and press out knobs a little bigger than walnuts.

Roll them in flour and arrange them on a greased oven plate and bake at a medium heat. Then let them cool.

When they are cool, turn half of them over, flat side up, and put a little of the melted chocolate on them. Cover them with the other half and press them together delicately. Let them cool well so that they stick properly.
