Preparation Soak the raisins in a warm water and a small glass of Sciacchetrà and then squeeze them. Peel the apples and remove the core. Cut them into cubes and put them into a bowl together with the pine nuts and the raisins. Ad the remaining Sciacchetra and let the mixture macerate for half an hour.
Melt the butter in bain-marie then let it cool slightly.. Beat the sugar and the eggs together until they are creamy white, then add the butter and the flour through a sieve, mixing well to prevent lumps from forming.
Then add the apples, raisins and pine nuts. At the end add the baking powder and mix well. Take a cake pan sized 26 cm. And grease it with butter. Pour the cake mixture into it and let it bake in a pre-heated oven at 200 ° for 30 minutes, then at 180° for 15-20 minutes.
To check that the cake is correctly baked, insert a wooden tooth-pick in the middle which should then come out dry.
