Sugar  300 gr.
Flour  300 gr.
Ricotta cheese  300 gr.
Baking Powder  2 teaspoons
Sugar in grains  as required
Almonds  100 gr.

Preparation Whisk the egg yolks and the sugar in a deep bowl together with the sugar. Then add the Ricotta cheese. Whisk the egg whites until they are firm and add them to the bowl as well as the flour. When the mixture is smooth and creamy, add the baking powder.

You can use any type of oven dish for your colomba, perhaps even something extravagant. Then grease the dish with butter and add a film of flour on it. Pour the mixture in and arrange the almonds on top as well as the sugar in grains. Put it into the oven for about 50 minutes at a temperature of 150°.
 
The Chef's tips To cool the colomba without it flopping take it out of the dish and using knitting needles put them through from one side to another, leaving it upside down until it has reached room temperature.
 
Curiosity The dough used for the colomba is the same as the one used for panettone, only without candied peel and raisins.
