Preparation Seep the raisins in warm water. Break up the butter and cream it together with 100 gr. of sugar. Beat the egg yolks with 100 gr. of icing sugar until they are fluffy. Add the butter and sugar mixture and add the flour leaving two tablespoons aside. Whip the egg whites until they are stiff and add together with a pinch of salt. Add the baking powder and squeeze the raisins, dry them and sprinkle them with flour and add. Divide the dough into two.
Mix the bitter and sweet cocoa together and add them to one of the two dough halves. Grease a cake tin, with a hole in the middle, with butter and sprinkle it with flour. Put the yellow dough inside, then add the darker mixture and mix a little to form a marble effect.
Bake at 170° for about 30 minutes and then raise the oven temperature to 200° and bake for a further 10 minutes. Remove the cake from the oven and sprinkle it with icing sugar. Let it cool before serving. The Chef's tips If you wish to make this recipe richer, you can add whipped cream. We recommend you should drink Cinque Terre Schiacchetrà with your cake. Curiosity Raisins are made from grapes having a high sugar content. They are dried in the sun or through hot air jets.
