Ingredients Apples  1/2 kilo
Flour  200 gr.
Sugar  200 gr.
Eggs  2
Butter  100 gr.
Baking powder  3 teaspoons
Lemons  1
Milk  1 glass
Salt  a pinch
Cinnamon  1 teaspoon
Icing Sugar  as required

Preparation Peel the apples and cut them into thin slices. Add some lemon juice to stop them from going black. In the meantime, turn on the oven.Using a large bowl or an electric blender, whisk the eggs and the sugar. When the mixture starts to rise, add the melted batter.

Then add all at once: The milk, a pinch of salt, the grated lemon rind, the flour mixed with the baking powder. When the mixture is smooth and homogeneous, add the apples. Mix everything well together and pour it into a greased oven dish. Decorate the cake with apple slices.

Lastly sprinkle the cinnamon mixed with icing sugar over the top. Put the cake into the oven for 40/50 minutes at 180°C. Let it cool and serve.
 
The Chef's tips Serve the cake with custard or lemon ice cream. You may drink a Sardinian wine such as Latinia with your cake.
 
Curiosity If you don’t have any icing sugar available, you can make some by grinding 2 tablespoons of sugar in a coffee grinder.
