Ingredients milk  500 millilitres
soluble coffee  2 tablespoons
bitter cocoa  1 tablespoon
flour  30 grams
sugar  60 grams
egg yolks  4

Preparation Bring the milk to a boil in a pot. Add the soluble coffee. Mix well and remove it from the fire.

Beat the egg yolks and the sugar together in a pot, until you have a smooth mixture. Add the flour and cocoa and mix together.

Add the coffee and milk to the mixture, a little at a time, stirring all the time. Pour the mixture again into a pot.Bring it to a boil and go on mixing. Cook for 10 minutes on a medium heat.

Take the pudding off the fire and pour it into a pudding mould. Let it cool. Put it into the refrigerator for 40 minutes.

Decorate with icing sugar and small pieces of chocolate. If you wish, you can add some small bran sticks. .
 
The Chef's tips If you want to take the pudding out of the mould without breaking it, emerge the mould in hot water and pass a knife around the edges of the pudding to detach it.
