Ingredients Flour  430 gr.
Sugar  100 gr.
Lemon  the rind of one lemon
Butter  60 gr.
Yeast  20 gr.
Icing sugar  100 gr.
Oil for frying  abundant

Preparation Sieve 400 gr. of flour with the sugar. Add a little salt and the grated rind of a lemon, mix and make a well in the middle. Melt the yeast in 10 dl. of warm water and soften the butter. Add both to the flour mixture.

Knead the dough well adding a little warm water for abotu 10 minutes until it becomes elastic. Put the dough into a dish, cover it and let it rise in a warm place for 2 hours.

Then roll out the dough until you have a sheet 1cm. thick. Using a 10 cm. round cutter or glass, cut out a numbe of rounds and cut out a small hole in the middle with a smaller cutter. Let them rest on a floured cloth, covered with another cloth, for an hour.

Heat the oil well in a pan and fry the rounds, a few at a time, only turning them over once. Let the oil drain off on absorbent kitchen paper then sprinkle them with icing sugar and serve hot.
