Preparation Peel the grapefruits by cutting them into sections all the same size then peeling them leaving the white pith out as it is inclined to be rather bitter. Place the peels in a pot and cover them with water. Boil for about 5 minutes, then drain and cover with water again. Repeat the operation 3 or 4 times to remove any bitter taste from the peels.

Put the peels into a pot together with the sugar and cover them with water. Let them simmer over a low heat for 2 hours and now the peels are translucent and the sugar is dense. Let the peels cool in the sugar, then they can be rolled in refined sugar and left to dry overnight.

Curiosity You can make different kinds of candied peels such as orange, following the same method. If you have a sweet tooth you can roll your candied peel in chocolate as well.
