Preparation Pour the cream into a saucepan together with the vanilla and the yellow part of the lemon peel as the white pith is rather bitter. Boil for 30 seconds and remove the lemon peel and the stick of vanilla, Pour the mixture slowly over the egg yolks and go on stirring. Mix everything well then pour it into another pot.
Cook the mixture over a low heat and be careful that it doesn’t boil and keep stirring all the time. Cook until it becomes dense (you will see the skin form on the top). Now pour the crème into single bowls or a large dish and let it cool. Before serving, sprinkle with brown sugar then caramelize using the special round iron. You will then get your tasty caramel on the top to be broken with your spoon. The Chef's tips If you like, you can put your crème just under the oven grill so that the sugar caramelizes.
