Ingredients White flour  500 gr.
Yeast  25 gr.
Eggs  3
Lemon peel  a small amount
Icing sugar  to sprinkle
Oil for frying  as required

Preparation Knead the dough together with the eggs, a small amount of grated lemon peel, the yeast diluted in a little warm water and add enough water to obtain an elastic dough.

Wrap the dough in a kitchen cloth and let it rest for about 40 minutes in a warm place. Cut the dough into pieces and shape them into small flat rounds. Fry them in plenty of hot olive oil. Drain them on absorbent kitchen paper then sprinkle them with icing sugar then serve.
