Almonds  170 gr.
Sugar  170 gr.

Preparation Scald the almonds in slightly salty water then let them drain and peel. Bake them in a preheated oven at 200 C. for about 3 minutes then let them cool. Crush them in a blender or in a pestle and sieve them.

Stir in 180 gr. of flour together with the almonds and lay them out onto a board making a hole in the middle. Melt the sugar in a pot with a little water on a low heat then pour it into the hole and add a pinch of salt. Knead the ingredients firmly until you have a soft dough.

Divide the dough into 3 or 4 pieces and make several small balls of about 2 cm in diameter. Press each one out to about 2 mm. then cut out the biscuits with a biscuit cutter.

Lay the biscuits onto a floured biscuit tin and bake them in a pre-heated oven at 200°C. for about 15 minutes. As soon as you have taken them out of the oven, remove them from the tin and let them cool before serving.
