Egg whites  1
Icing sugar  2 tablespoons
Almond flakes  1 teaspoon
Cognac  ˝ a small glass
Sugar  1 teaspoon
Black chocolate  50 gr.

Preparation Wash and dry the persimmons and cut them in half. Line an oven-proof dish with oven paper and place the persimmons carefully on the bottom. Sprinkle with the cognac.

Whip the egg white with a pinch of salt until it is stiff. Add the sugar a little at a time, then insert the mixture into a pastry bag and squeeze onto the persimmons. Decorate with the almond flakes and bake in the oven for 5 minutes.

In the meantime, break the chocolate into pieces and melt it in bain-marie. Turn off the heat and add a teaspoon of sugar and a teaspoon of cognac. Arrange the persimmons on dessert plates and sprinkle with icing sugar. Decorate the plates with almond flakes and the persimmons with squeeze the persimmons again with streaks of chocolate
