Preparation Clean the Swiss chards and wash and dry them thoroughly. Cut them into strips and put them into a bowl. Stone the olives, dice them roughly and add them to the vegetables with a pinch of salt and pepper, the diced chilli and a little oil. Mix carefully.
Put the flour on a pastry board with a well in the middle and sprinkle it with salt. Put 2 spoonfuls of olive oil in the well and the ready made bread dough.
Knead the ingredients adding enough warm water to obtain a soft dough. Make it into a ball and roll it our onto the floured board to form an oval. Grease an oven plate and put the rolled out dough on it.
Put the Swiss chards on half of the dough leaving a border free of about 2 cm. Fold the dough in half to form a large calzone and close the borders very well to avoid the calzone opening and the filling coming out. Cover it with oil and put it into the oven at 180°C. for about 30 minutes. It can be served either hot or cold. The Chef's tips Many people prefer to drink beer with this dish instead of wine.
