Peeled tomatoes 300 gr.
Extra-virgin olive oil 2 tablespoons

Parmesan cheese 50 gr.

Preparation If you have some left over rice, this is a marvellous, tasty recipe to use it up. Otherwise, after boiling, season the rice with sauce made from tomatoes. Sauté the onion in the extra-virgin olive oil and add the tomatoes. Salt to taste.
Cook for 15 minutes and add to the rice as well as the Parmesan cheese. Then mix the rice with 2 eggs to bind. Make a hole in the middle and insert a cube of Mozzarella cheese. Then cover the holes up.
Whisk two eggs and add a little salt. Roll the balls in the eggs and then in the bread crumbs. Fry in hot oil until they are brown.
