Pizza base

Topping:
Mozzarella cheese  250gr.
Asparagus  500gr.
Tomatoes  6
Extra virgin olive oil  as required
Garlic  1 clove
Parsley  a bunch
Salt  to taste
Pepper  to taste

Preparation Prepare the dough for the pizza according to the recipe for a pizza base.

Wash the asparagus and boil them for a few minutes. In the meantime wash and cut the parsley finely.

Put some extra virgin olive oil into a large pan and add a clove of garlic. Then add the asparagus and let cook. Take it off the fire and add salt, pepper and the parsley.

Spread some olive oil over the pizza and put it into the oven for about 10 minutes, so that the dough starts baking.

In the meantime, wash the tomatoes and cut them into slices.

Take the pizza out of the oven and and arrange the slices of tomato on the pizza. Sprinkle it with the Mozzarella cheese and add the asparagus. Add salt, pepper and some olive oil.

Put it back into the oven for about another 15 minutes and let it bake until it is ready.
 
The Chef's tips The best way to cook asparagus is steaming, because it retains their vitamins and minerals, that is to say vitamin C, calcium, phosphorus and potassium. Drink a rosé wine like Salice Salentino with your pizza.
